Introduction

The Salsiccia Toscana (Tuscan sausage) is a traditional pork preserved product originating from the region of Tuscany, Italy, characterized by a cylindrical, tubular shape approximately 10 cm in length and a pinkish color. It is typically stuffed into a natural pork casing and formed into linked portions. The texture is soft and moist, reflecting both the fat distribution and the freshness of the raw materials.

Traditionally, production was limited to the winter months, but in recent decades it has expanded to include year-round production, including summer months. This extension of the production season has led to an increase in annual output, which currently amounts to approximately 20,000 quintals.

Historically and culturally, the product has been deeply rooted in Tuscan culinary practice. In many areas of Tuscany, consumption of raw sausage has been common both in the past and continues to be frequent today. However, this traditional practice is not compliant with current hygienic and sanitary regulations, which generally require adequate cooking to ensure food safety.

Production methods for salsiccia Toscana

The production process begins with the careful selection of pork meat cuts, which are then mechanically processed through grinding (mincing). The minced meat is subsequently mixed in a controlled blending phase, during which salt, pepper, crushed garlic, and natural aromatic herbs are added to achieve the characteristic flavor profile.

Once the mixture is prepared, it is stuffed into natural casings using dedicated stuffing equipment. The linking of individual sausages is performed manually, ensuring uniform size and traditional presentation. Following stuffing, the sausages undergo a period of curing/maturation, which takes place in specially designated cellars or curing rooms, where temperature and humidity conditions are maintained to support proper development of flavor and texture.
