Introduction
Cocoa-derived foods are among the most widely used ingredients in the food industry, thanks to their ability to enhance preparations with flavour and depth. Available in different forms, they are used across numerous areas of confectionery production, from pastry-making to ice cream, as well as baking and artisan chocolate making.
In everyday use, cocoa is a key ingredient in cakes, biscuits, mousses, creams, ice creams, chocolate bars, and spreads, as well as in refined pralines and chocolate tablets. It is also widely appreciated in beverages, both hot and cold. More unconventional applications can also be found in savory dishes, where it helps create distinctive aromatic contrasts.
